Refreshing Cucumber Lemonade

We are being overtaken by cucumbers!  OK a slight exaggeration but the garden is producing more than we can eat right now. So today I decided to try some in a drink hence we had Cucumber Lemonade for lunch. The taste was slightly tart and we enjoyed the texture of the added pulp. I might even try more cucumber in the next batch. I always thought of cucumbers as low in nutrients, but apparently not. For those who are interested cucumber juice is rich in potassium, silica, manganese, sulfur, vitamin A, vitamin C, folate and chlorophyll. The nutrients in cucumbers help to improve and maintain healthy skin, nails and hair. But best of all it tasted great!
